Date Bars

Ingredients:

1 cup whole wheat flour
Pinch salt
1 tsp. vanilla
3/4 cup honey
1 cup butter or margarine
1/2 cup bran
11/2 cups rolled oats
1 cup soft dates, pitted
11/2 cups water or fruit juice

Instructions:

Mix first 4 ingredients together. Cut in butter. Stir in oats and bran. Spread half of the mixture in an 8″ square baking pan. Make filling by soaking dates a few hours in water or juice. (You can use other dried fruit for variation.) Then blend in a blender. Pour blended fruit into a pot and cook over medium heat, stirring constantly until mixture thickens to mashed potato consistency. Pour filling onto mixture in baking pan and crumble other half of mixture on top. Add 1/2 cup chopped nuts or seeds if you like. Bake at 325º for 35 to 40 minutes. Cool and cut into bar shapes.
