QUICK & EASY MEXICAN CHILI



½ med. Onion, chopped
1 green or red pepper, chopped
4 cloves garlic, minced
dash each: garlic powder, paprika and cayenne

1 can kidney beans with juice
1 can pinto beans with juice
1 block extra firm tofu, cubed
¼ C. tomato paste mixed with ¼ C. water
2-3 Roma tomatoes, chopped

Saute onion and bell pepper until tender. Add garlic and stir. Add the rest of the ingredients, cover and let simmer on medium/low for about 20 minutes.
