When it is perfectly mature it has a white body, very soft, buttery with a distinctive taste of milk and almost imperceptible acidity. Fat content is between 49.72 and 51.44%.
Casateila cheese is very digestible with high nutritional value and rich in vitamins. Especially suitable for organisms intellectually fatigued.
The production methods vary from manufacturer to manufacturer. Form of small measure with a height ranging from 3 to 5 cm or 5 to 9, from 11 to 22 cm diameter.
