Cream of Amaranth

Ingredients:

  • 1/2 cup amaranth
  • 1 1/4 cups filtered water
  • 1/4 teaspoon sea salt
  • 1/2 cup silken tofu
  • 1 palmful cashews
  • 1 palmful raisins
  • 1 tablespoon pure maple syrup
  • 2 tablespoons protein powder

How to prepare:

1. Bring amaranth and salted water to a boil. Lower heat and cook covered until tender, about 25 minutes. Let stand for 5 minutes.

2. Mix in the rest of the ingredients until creamy.

3. Sprinkle protein powder on top and serve immediately
