Cruciferous vegetables march on!

In a small, preliminary study, patients who had surgery to remove tumors of the vocal cords had less tumor regrowth while eating mucho crucifers daily – equal to about 1 1/2 cups chopped cooked broccoli or cauliflower, 10 brussels sprouts, 2 1/2 cups coleslaw or juice from 1/2 head of cabbage (American Institute for Cancer Research Conference, Washington, D.C., August 1995).

These tumors – called benign papillomas – recur frequently. Researchers think the good guy may be a phytomin in crucifers called indole-3-carbinol (I-3-C) that may also help stymie cancer tumors in the cervix and breast. In fact, women at high risk for breast cancer are now testing crucifer-rich diets.
