This is a great quiche-style dish to offer with your Christmas Dinner. It’s always a big hit at the Christmas and New Years Pot Luck Parties as well!
4 Cups – Chopped raw green garden vegetable (spinach, broccoli, chard, or asparagus)
½ Cup – Chopped purple onion
2 Cups – Milk or soy milk
¼ Cup – Grated Cheese (milk or sharp cheddar)
2 Tbsp. – Nutritional yeast
1 Tbsp. – Egg replacer (Ener G)
¼ tsp. – Chili powder
¼ tsp. – Curry powder
- Blend vegetables, except the onions, in the blender with the rest of the ingredients.
- Stir in the onions and pour into an unbaked pie shell.
- Bake at 350 degrees for 30 minutes
Serve with a little chopped fresh parsley on top!
