MUSHROOM BURGERS

These are fast and delicious. They require cooked rice so when I have left over rice we have mushroom burgers. There are many delicious pre-made burgers available in natural food stores but these are very healthy because of the fresh ingredients and they’re less expensive!

2 Cups Mushrooms wash and pat dry, blend in food processor to chop.
½ Cup Onion, chopped slightly
¾ Cup Walnuts
2 Slices Whole wheat bread
½ Cup Parsley
1 Tbs Sesame seeds
1 Clove Garlic, diced fine
1 Cup Precooked brown rice
1 Tbs Basil, dried
2 Tbs Soy sauce
½ tsp Spike seasoning salt, or to taste ½ to ¾
½ Cup Tofu, firm

This is a very quick recipe with a food processor. Chop the mushrooms and put into a bowl. Chop the onion and add to the bowl. With food processor, chop the bread crumbs and the parsley at the same time and add to the mushrooms. Add the sesame seeds, garlic, rice, dried basil, soy sauce, spike and drained tofu. Mix ingredients very well by hand.

Preheat oven to 350 degrees.

While oven is preheating, form 8 patties and place then on a non-stick cookie sheet that has been sprayed with a little olive oil. When oven is ready bake mushroom burgers for 8 minutes and then turn and bake for 4 more minutes.

Serve on a delicious whole-wheat bun with the works! Veganaise with grapeseed oil is an especially delicious mayonnaise substitute.
