Nutritious Nori Rolls

These super nutritious, high protein rolls are a fun alternative to traditional sushi. This version is meat-free and rice-free, making the dish suitable for those on a restricted diet, and it is packed with vital, energy-giving nutrients.

Ingredients:
6-7 sheets Nori (the raw kind wraps bettter than the roasted)
1/2 Cup Carrot pulp- leftover from juicing (or run carrots through Champion juicer
using blank screen, or run through a food processor)
3/4 Cup Raw almonds (soak in water for 24 hours, then grind through food processor or
run through Champion juicer using blank screen)
1 Tbsp. Tahini
1Tbsp. Green onion, minced
1/2 Avocado, sliced
1/2 Cup Red bell pepper, slivered
1 1/2 Cup Alfalfa sprouts
Shoyu, tamari, or dulse flakes
Apple cider vinegar
Mix carrot pulp, almond meal, and tahini in a large bowl. Add green onions.

Lay the nori sheet on a clean, dry surface. You can do one at a time, or more if you have room. Spread the carrot-almond mixture on the entire nori sheet, about 1/4 inch thick.
Lay 2 slivers pepper across the sheet in the middle. Then layer with 2 slices avocado, and top with alfalfa sprouts.

Sprinkle over everything with vinegar, and shoyu, tamari, or dulse to taste.

Start rolling from the edge of the sheet closest to you and roll over the veggies until you get to the other side. There is enough moisture in the veggies so that the edges seal right up. Just tuck the ends in. It’s fun!

Now you can cut into pieces and eat with chopsticks or just pick the whole roll up and eat it!
