Recipes for the Modern Vegetarian on the Go

Although these recipes are nice to use when there just isn’t the time; however, I do suggest making time throughout the week to eat with family and friends, and slow down for an hour or so, in order to develop a balanced approach to eating.

If you are like most of us in the modern world, then you are probably very busy and active, and don’t always make the time to sit down and eat a balanced meal. This type of lifestyle can catch up to all of us, so it is important, regardless of how busy, to make some time two to three times a day to eat a healthy, balanced, and nutritious vegetarian meal, or snack. But what to do when you are on the way out the door, or just can’t stop?
Planetveggie.com is happy to provide our usual great recipes that require more preparation and eating time, but also supply all you folks on the go with some new, quick, tasty, and nutritious ideas.

Pineapple Power Crunch
In a large bowl, mix up diced or sliced pineapple (or if not available fresh, then unsweetened, canned pineapple), shredded coconut, your choice of nuts or seeds (I love Brazil nuts and flax seeds), a hand full of raw oats, a dash of cinnamon, and a dollop of maple syrup (notice that you don’t even need to measure anything here!). Mix up with spoon. Say thank you. Eat. This recipe is full of nutrition, takes 2 minutes to make, is very tasty, and will provide you with hours of energy.

Yogurt Delight
In a large bowl, pour a half a cup or a cup of yogurt (preferably organic and plain), a tablespoon of maple syrup, dash of cinnamon, cardamom, and clove, a hand full of sesame and sunflower seeds, and one ripe banana. Mix with spoon. Take a moment to breathe deeply with appreciation before eating (you will have saved so much time that you will have more than enough time to pause for a moment before eating). This recipe is full of protein, taste, convenience, and has a calming effect on the body. The spices also help with digestion. You’ll be on your way soon, without having to sacrifice proper body care.

The balanced vegetarian lifestyle is the healthiest for our bodies and minds, and can provide us with nourishment, energy, taste, strength and peace of mind. With the world in such a rush these days, it is an act of love to slow down, buck the hurry, hurry, hurry mentality, and give more importance to simple, healthy activities. Make enough for 2, and surprise someone at work or home with a “quick ‘n easy” recipe. Sharing good things more than doubles the fun.
