Turkey Tortilla Roll-Ups

When you need dinner on the table in less than 15 minutes, serve these turkey roll-ups. To keep the preparation quick, use either leftover cooked turkey breast or turkey breast from the deli. Serve the tortillas topped with nonfat sour cream and additional salsa.

  • 2 cups chopped broccoli, zucchini or cauliflower
  • 1 medium onion, chopped
  • 10 ounces cooked and chopped turkey breast
  • 1 1/2 cups reduced-sodium salsa
  • 3/4 cup (3 ounces) finely shredded fat-free Cheddar cheese
  • 1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese
  • 10 flour tortillas (8 inches diameter)

In a medium microwave-safe bowl, mix the broccoli, zucchini or cauliflower and the onions. Cover with a piece of wax paper. Microwave on high power for a total of 3 to 4 minutes, or until the vegetables are tender; stop and stir after 1 1/2 minutes.

Stir in the turkey and the salsa. Set aside.

In a small bowl, toss together the fat-free cheese and reduced-fat cheese.

Place a tortilla on a flat work surface. Spoon about 3 tablespoons of the turkey mixture in the center, slightly off-center. Sprinkle with a scant 2 tablespoons of the cheese mixture. Then carefully roll up the tortilla and place it, seam side down, on a baking sheet. Repeat to use all the tortillas, turkey mixture and cheese.

Broil the tortillas 2 inches from the heat for 3 to 4 minutes, or just until the cheese melts.

THINK AHEAD: These roll-ups store well and can be reheated in the microwave. To reheat, place one tortilla on a microwave-save plate. Cover with a piece of wax paper and microwave on high power for 30 seconds, or until heated through.
