The ingredients for the dough preparation are as follows:
200 g of butter,
500 g of flour,
100 g of starch,
3 whole eggs.
It works like génoise pastry. Whisk very, very well with a wooden spoon until the mixture is foamy, add the sifted flour with starch and the beaten egg white. It is baked in a moderate oven without opening before it’s spent a good half hour.
