Southern Style Soy Sprouts


2 Tbsp. oil
1/8 tsp. asafetida
1/3 cup celery
2 cups tomatoes
1/4 bay leaf
1 tsp. vegetable salt
2 cups soy sprouts


Heat oil and sauté with next 2 ingredients. Then add next 3 ingredients and simmer for 10 minutes. Remove bay leaf and add sprouts. Bring to boil, then lower to simmer for 15 – 20 minutes until sprouts are tender. You may also use any other large, starchy bean in place of soybeans, such as mung bean or lentil sprouts. Cook these only 8 to 10 minutes.
