TVP TACOS

Texturized vegetable protein is derived from soybeans. To use it in any recipe you need to first soak it in an equal amount of water for about 5 minutes. After it has been soaked, you can make many of your favorite foods with it. It is excellent in spaghetti sauce, enchiladas, scrambled with tofu, stroganoff, and today’s recipe… tacos!

2 C. TVP soaked in 2 C. water (sold in bulk at DTE)
1 pkg. Hain Taco Seasoning mix
½ C. onion, diced
½ C. bell pepper, diced
3 Tbsp. safflower oil

1 pkg. corn or wheat tortillas

1. Heat oil in a skillet, add the onions and bell pepper and sauté for a couple minutes.
2. Add the TVP and Taco Seasoning mix (follow the directions on the back of the package). That’s all there is to it. Set aside and prepare the tortillas and veggies.
3. To heat the tortilla, heat individually in a skillet with a drop of oil.
4. Fill your taco with shredded fresh lettuce, cubed tomatoes, and salsa. The Down to Earth deli makes the best I’ve ever tasted. Grate some cheese on top or use a soy-based cheese. Enjoy your taco with the above ingredients, some nice refried beans and a healthy soda!
