Orange Nut Loaf


1/3 cup butter or oil
1/2 cup honey
4 Tbsp. grated orange rind
Egg replacer equal to 2 eggs
21/4 cups whole wheat flour
3 tsp. baking powder
1 tsp. baking soda
1 cup chopped cashews
1 cup chopped dates
3/4 cup fresh squeezed orange juice
4 Tbsp. yogurt
2 Tbsp. orange juice
2 Tbsp. honey


Preheat oven to 350ºF. Cream together first 2 ingredients. Add next 2 and mix. Sift in next 3 ingredients, then add chopped dates and cashews and mix well. Add next 2 ingredients, mixing quickly and thoroughly. Scoop into a buttered and floured loaf pan and bake at 350º for 1 hour. In the last 30 minutes of baking, baste the top every 5 minutes with orange juice and honey mixture. When cool, remove from pan. Wrap in wax paper and then in a plastic bag. Set in refrigerator for one day before serving. Yields about 12 slices.
